Iodine: a little mineral with a lot of health implications.

Since iodine is used to make thyroid hormones, an iodine deficiency can cause your thyroid hormone levels to plummet. Given that thyroid hormones help control the speed of your metabolism, low thyroid hormone levels may cause it to slow down. Children born to mothers deficient in iodine can suffer a range of defects including mental handicap, deafness and speech and physical impairments. Iodine deficiency can also lead to low cognitive and functional development in early childhood.
Naturally found in seafood, eggs and seaweed, it is estimated that and about 1/3 of the population are at risk of iodine deficiency¹. Governments around the world realise the importance of Iodine and have historically added it to salt (iodised salt) or processed bread to avoid deficiency. When China had a large deficiency problem which was leading to learning impairments, handicap and low IQ levels, they actually made it law to include iodine in the diets of citizens²

With the rise of fancy sea salt in kitchen pantries and less processed breads with added iodine in them, iodine deficiency is on the rise again in the west.
